Les stages de Pâtisserie du CFA de Groisy s’organisent aux côtés des chefs pâtissiers.
Basés sur la convivialité, ces cours ont pour objectif de vous faire découvrir les techniques fondamentales de la pâtisserie et les tours de main qui vous permettront de sublimer vos desserts à la maison.
À chaque stage un thème : durant le cours, vous pâtissez sous les conseils avisés des chefs : démonstration, conseils et mise en pratique par chacun. toutes les étapes de fabrication sont « maisons ».
À l’issue de la séance, vous dégusterez vos réalisations avec votre famille et vos proches.
Un petit encas est proposé pendant les temps de repos des préparations ou de cuisson !
Le principe : accessible à tous( 18 ans et plus, les enfants de plus de 12 ans accompagnés d’un parent sont les bienvenus), aucun niveau de pâtisserie n’est requis. Votre bonne humeur et votre envie de partager sont les sources de votre motivation à nous rejoindre.
Le programme :
- 10 janvier 2020 : Galette des rois : feuilletage, réalisation d’une frangipane, rayage de galette
- 7 février 2020 : Tarte tatin et glace vanille : pâte, travail des pommes et turbinage de la glace
- 13 mars 2020 : Forêt Noire : génoise chocolat, chantilly, mise au point du chocolat, copeaux de chocolat
- 3 avril 2020 : Pâques est là : montage d’une pièce de votre choix en chocolat, et réalisation de la traditionnelle friture
- 15 mai 2020 : Tropézienne : réalisation de la brioche et de la crème diplomate
- 19 juin 2020 : Voyage en Italie : tiramisu et pizza
